Smokey Black Bean Soup

Ingredients

yellow onion
diced

garlic
minced or 1/8 tsp garlic powder

jalapeño
seeded and diced (optional)

can diced tomatoes

cooked black beans
or 3 cans drained and rinsed

tsp
ground cumin

tsp
dried oregano
1/2
tsp
smoked paprika
Salt to taste
Instructions
Heat olive oil over medium heat in a large pot. Add onions, minced garlic, and jalapeño, cooking until onions soften.
For a creamier soup, puree 3 cups or 2 cans of black beans in a blender with a bit of water to help it blend. For a thicker soup, skip this step.
Add beans and diced tomatoes to the pot with the cumin, oregano, and paprika. Stir to combine.
Place a lid on the pot and allow soup to simmer. Allow to simmer for about 15 minutes, stirring frequently.
Add salt to taste, then serve immediately or chill within 2 hours.
