In a large bowl, mix the ground chicken, breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, onion powder, and black pepper until combined. Shape into 4-5 equal patties.
Heat olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F).
Spoon about 2 tbsp of sauce over each patty, then top with a slice of mozzarella. Cover the pan for 1-2 minutes until the cheese melts.
Optional: While the cheese is melting, toast the buns in a separate pan until golden. Or, wait for cheese to melt, remove patties and use the same pan to toast the buns.
Place the cheesy chicken patty on the bottom bun, add fresh basil, then top with the other half of the bun.
Serve with a side of salad, roasted veggies, or baked sweet potato fries for a balanced meal.
Store the chicken patties in an airtight container in the fridge for up to 4 days.
