Veggie-Ful Breakfast Bites
A veggie-loaded bite is the perfect on-the-go snack that guarantees yourbody will be fed fiber and antioxidants! Customize this recipe with yourfavorite vegetables or berries.
Ingredients
- 1/2 cup zucchini grated and packed
- 1/2 cup carrot grated and packed
- 1 1/2 cup oats uncooked, quick or rolled
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce or very ripe mashed banana
- 1 egg
- 1 tablespoon coconut oil or avocado oil melted
- 1/4 cup honey
- 1 teaspoon vanilla
- 1 cup frozen mixed berries
Instructions
- Preheat your oven to 350℉ and line a large baking sheet with parchment paper.
- Place grated zucchini and carrots in the middle of a paper towel. Wrap it up and press down to draw out the water. Set aside.
- In a medium bowl, combine oats, flour, baking powder, cinnamon, nutmeg, and salt. Mix.
- Add applesauce or banana, egg, oil, honey, and vanilla to the bowl and mix to combine.
- Once batter is well mixed, fold in the drained carrots and zucchini.
- Finally, fold in mixed berries. It is okay if berries get mashed as their flavors get distributed.
- Using a small cookie scoop or a heaping tablespoon, scoop batter into 15-20 bites onto your prepared baking sheet.
- Bake for 15-17 minutes or until the outside of the cookies are dry to the touch and the outside is starting to turn golden brown. Let cool for 5 minutes then enjoy.
Notes
Allow leftovers to cool completely before transferring to an air-tight container and storing in your fridge for up to 4 days.
