
Vegetable Lo Mein
This simple vegglie lo mein is an easy, budget-friendly meal ready in 20 minutes! Fresh veggies and noodles are tossed in a savory sauce for a quick, flavorful dish. Perfect for a healthy weeknight dinner!
Ingredients
- 6 oz whole wheat noodles
- 3 Tbsp soy sauce
- 1 tsp toasted sesame oil
- 1 tsp sugar
- 1 tsp water
- 2 Tbsp vegetable oil
- 3 cups mixed vegetables chopped
Instructions
- Cook the noodles based on package directions. Drain in a colander.
- While the noodles are cooking, mix together soy sauce, sesame oil, sugar, and water.
- Heat a pan over medium high heat and add cooking oil. Allow the oil to heat through, then add the vegetables. Stir fry until they are partially cooked through, about one minute.
- Add the noodles and sauce to the pan. Stir until the pasta has absorbed most of the sauce, about two minutes.
- Serve immediately and refrigerate leftovers within 2 hours
