Vegetable Lo Mein

This simple vegglie lo mein is an easy, budget-friendly meal ready in 20 minutes! Fresh veggies and noodles are tossed in a savory sauce for a quick, flavorful dish. Perfect for a healthy weeknight dinner!

Ingredients
  

  • 6 oz whole wheat noodles
  • 3 Tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp sugar
  • 1 tsp water
  • 2 Tbsp vegetable oil
  • 3 cups mixed vegetables chopped

Instructions
 

  • Cook the noodles based on package directions. Drain in a colander.
  • While the noodles are cooking, mix together soy sauce, sesame oil, sugar, and water.
  • Heat a pan over medium high heat and add cooking oil. Allow the oil to heat through, then add the vegetables. Stir fry until they are partially cooked through, about one minute.
  • Add the noodles and sauce to the pan. Stir until the pasta has absorbed most of the sauce, about two minutes.
  • Serve immediately and refrigerate leftovers within 2 hours
