Jollof Rice

Ingredients
  

  • 1/4 cup olive oil
  • 1 large red onion diced
  • 1 cup bell peppers diced
  • 4 stalks green onions sliced
  • 1 tsp garlic minced
  • 1 1/2 tbsp curry powder
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • ground ginger a couple small pinches
  • 2 tsp thyme
  • 3 bay leaves
  • 3 tbsp tomato paste
  • 1/2 cup crushed tomatoes
  • 1 cup rice
  • 1 1/2 cup vegetable broth

Instructions
 

  • Rinse and drain your rice to get rid of excess starch, then let it soak in water while you prepare your ingredients.
  • Heat oil in a large pot or deep skillet over medium heat.
  • Once the oil is shimmering, add the onions, peppers, and green onions and cook until the oil has softened. Then add the minced garlic.
  • Next, add in Cumin, dried thyme, bay leaves, garlic powder, onion powder. You may adjust the seasonings according to your preferences.
  • Add the tomato paste and crushed tomatoes. Mix and cook the sauce until it becomes paste-like or the color turns a deep red color.
  • Drain your rice and add the rice grains to the vegetable-tomato paste on the stove. Stir the pot well to combine the rice and the paste.
  • Then add the vegetable broth. The water level should be about the same level as the rice. Let it come to a boil.
  • Cover your pot or skillet and set the stove to low. Cook for about 30-35 minutes or until the rice is al dente and liquid is absorbed.
  • Once the rice is done, remove the pot from the hot burner and set it the side for 15 minutes. Fluff rice with a fork and serve.
