Chickpea (Garbanzo Bean) Cookie Dough

Chickpeas provide a great source of fiber and protein, making this healthy cookie dough a nutritious treat. It tastes just like regular chocolate chip cookie dough, but you can enjoy it straight from the bowl!

Ingredients
  

  • 1 15 oz canned chickpeas rinsed and drained
  • 1/4 cup peanut butter
  • 1 tsp vanilla extract
  • 3 tbsp Oats (old-fashioned or quick oats)
  • 2 Tbsp Maple syrup
  • 1/4 cup chocolate chips semi-sweet
  • 1/4 tsp salt

Instructions
 

  • Use a blender to blend the oats into a flour consistency. Set aside oat flour and blend chickpeas until smooth.
  • Add oat flour, vanilla extract, maple syrup, salt, and peanut butter to the chickpeas. Blend ingredients until a thick, even dough forms, scraping the blender as necessary.
  • Transfer the dough into a large bowl and fold in the chocolate chips.
  • Serve and enjoy! Store in the fridge for up to one week.
