
Smokey Black Bean Soup
This vegan, easy and filling recipe is packed with plant-based protein and flavor!
Ingredients
- 1 yellow onion diced
- 2 cloves garlic minced or 1/8 tsp garlic powder
- 1 jalapeño seeded and diced (optional)
- 2 Tbsp olive oil
- 1 15 oz. can diced tomatoes
- 4.5 cups cooked black beans or 3 cans drained and rinsed
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt to taste
Instructions
- Heat olive oil over medium heat in a large pot. Add onions, minced garlic, and jalapeño, cooking until onions soften.
- For a creamier soup, puree 3 cups or 2 cans of black beans in a blender with a bit of water to help it blend. For a thicker soup, skip this step.
- Add beans and diced tomatoes to the pot with the cumin, oregano, and paprika. Stir to combine.
- Place a lid on the pot and allow soup to simmer. Allow to simmer for about 15 minutes, stirring frequently.
- Add salt to taste, then serve immediately or chill within 2 hours.
