Apricot Pancakes
You’ve probably heard of blueberry pancakes, but have you heard of apricot pancakes? Apricots are rich in potassium and phosphorus which help with muscle and nerve function as well as energy production.
Ingredients
- 1 can apricot halves thinly sliced
- Dash of cinnamon
- pancake mix that only requires water
- water
Instructions
- Mix pancake batter with water according to directions on the pancake mix.
- Add cinnamon as desired.
- Pour the batter into a skillet on medium high heat and place apricots on top. Adjust heat as needed.
- Once the bottom side is cooked, and the top of the pancake has stopped forming bubbles, flip the pancake and allow apricots to cook.
Notes
You can substitute apricot for other fruits like peaches. You can also use whichever pancake mix you like, just be sure to follow the directions on the box or bag for making the pancakes.
