Apple Chicken Salad Sandwich
This flavorful recipe is the perfect snack, appetizer, or meal! Using the MyPlate as a guide, the apple chicken salad sandwich is a wonderful way to enjoy food from all of your food groups.
Ingredients
- 3 cups chicken cooked and chopped
- 1 apple chopped, about 1.5 cups
- 1/2 cup diced red onion
- 2 celery ribs chopped
- 1/4 cup raisins or golden raisins
- 1/3 cup mayonnaise
- 1/3 cup plain yogurt
- 2 Tbsp mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- Loaf whole-wheat bread
Instructions
- Chop the cooked chicken, celery, and apple into small pieces. Finely dice the red onion.
- Place the chicken, celery, apple, onion, and raisins in a large bowl.
- Combine the mayonnaise, yogurt, mustard, salt, and pepper in a bowl. Stir until smooth.
- Pour the dressing over the salad ingredients in the bowl and stir until everything is coated.
- Serve the chicken salad as a sandwich on whole-wheat bread.
Notes
You can use basked, rotisserie, or canned chicken. You can also substitute chicken for canned tuna.
