Arabic Salad
Enjoy a vibrant and beautiful Arabic salad at your next meal. This salad is "herb"-a-licious, featuring parsley, green onion, and mint. The lemon juice gives it a zesty flavor and the combination of cucumber and red bell pepper give it a light and refreshing crunch.
Ingredients
- 5 medium Roma tomatoes diced into 1 cm pieces
- 1 English cucumber diced into 1 cm pieces
- 1 Red bell pepper cored and deveined, diced into 1 cm pieces
- 5 green onions finely sliced
- 3 tbsp Olive oil
- 1 cup Flat leaf parsley finely chopped
- 1/2 cup Mint leaves shredded (optional)
- 1 clove Garlic minced
- 2 tbsp Lemon zest
- 3 tbsp Lemon juice
- Salt and black pepper
Instructions
- Drain the chopped tomatoes and place them in a large bowl.
- Add the rest of the ingredients.
- Mix well and taste. Add salt and black pepper to taste.
- Serve with your choice of grains, protein, and dairy.
